Vegan hemp cheesecake is high on nutrition

I've heard of cooking with hemp before but it was always brownies, not cheesecake (and I never inhaled, I swear!). But this hemp is in the form of seeds, not weeds, and this vegan cheesecake is a delicious way to get high on nutrition—and it's completely legal.

Hemp seeds are power-packed little dynamos, one of the plant world's most concentrated, complete and balanced sources of essential amino acids (EAA's) and essential fatty acids (EFA's). Hemp seeds are high-quality protein and contain high amounts of essential nutrients including chlorophyll, magnesium, potassium, sulfur, phytosterols, ascorbic acid, beta-carotene, calcium, fiber, histidine, iron, potassium, phosphorus, riboflavin, niacin and thiamin.

Vegan Cheesecake

3/4 cup shelled hemp seed
1 cup warm water
1/2 cup raw honey
16 oz firm tofu
1 tsp vanilla
1/2 tbsp lemon juice
1 tbsp arrow root
1 organic graham cracker crust

  • Preheat oven to 350 degrees.
  • In blender, puree shelled hemp seed with water until smooth.
  • Add remaining ingredients and blend.
  • Pour mixture into graham cracker pie shell, and bake for about 30 minutes.
  • Once cooled, top with berries or honey
